Domaine Paul Thomas, Sancerre, Loire

About this selection

  On the most high slopes, on the marl limestone floors near the village of Verdigny, the Thomas family has owned vineyards since 1670. The planted sticks Sauvignon Blanc and Pinot Noir are on average 40 years old. Fermentation and maturation of pure, elegant Sancerre Blanc takes place on stainless steel barrels and the wine rests on its lie (droesem of dead yeast cells) for 6 months to gain roundness and to reduce part of its acids. Son Julien has been helping his father Jean with the vinification since 2005 and is intended to succeed. His sister assists his mother in administration and sales.
