Let op: dit is een halve liter fles. Het klimaat in de Vallée du Layon is perfect geschikt voor de ontwikkeling van botrytus cinerea (edele rotting). De koele, vochtige nachten, de ochtenddauw en –mist, afgewisseld met warme, zonnige middagen zorgen voor een gecontroleerde groei van deze schimmels. Dit zorgt voor prachtige zoete wijnen met een uniek, complex karakter.
De druiven worden op verschillende momenten geoogst, waarbij alleen de perfect rijpe druiven worden geselecteerd. Na een zachte persing vindt een spontane vergisting plaats met behulp van de natuurlijke gisten, waarna de wijn nog 9 maanden verder rijpt in grote eikenhouten vaten.
